Baked Rice Pudding

Baked Rice Pudding

4 eggs beaten
1/2 cup sugar
1 teaspoon vanilla
3/4 teaspoon cinnamon
1/8 teaspoon salt
1 1/2 to 3 cups cooked rice white or brown
1/2 cup raisins
3 cups warm milk

Combine eggs, sugar, vanilla, cinnamon, and salt.
Stir in rice  and raisins.
Stir in warm milk.
Pour into buttered casserole.
Put casserole in pan of hot water 1 inch deep
Bake at 325 degrees about one hour or until knife inserted near center comes out clean.
Stir once halfway through baking.
Cool to warm and serve warm or cold.
